Which format should I use?

JPG is the most compatible and smallest, ideal for photos. PNG is lossless and keeps transparency, ideal for logos and screenshots. WebP is modern and very small, but some older programs cannot open it.

What happens to transparency when converting to JPG?

JPG does not support transparency: transparent areas are filled with the color you choose, white or black.
